About the Coffee
Chiapas is Mexico's oldest coffee-producing region, and it's still the biggest. With the Pacific Ocean working on it from the west and the Atlantic from the east, the place is a patchwork of microclimates, each doing its own thing.
Cutting through the state on their way to the Guatemalan border are the slopes of the Sierra Madre de Chiapas. Up there the coffee gets everything it could ask for: high altitude, generous rainfall and rich volcanic soil. It grows in the dappled shade of light native forest, which also gives a good variety of local wildlife a place to call home.
The growers are smallholders who have spent their whole lives at this. Each one pulps the cherry by hand, ferments it in small tanks and dries the parchment on their own patio. It's proper hands-on work. Once that's done, a dry mill owned by the cooperative works side by side with the farmers to prepare the coffee for export.
Washed Caturra, Typica and Catuai, and a cup that doesn't need to show off: bakers chocolate and roasted almond up front, a little cherry, and a warming hint of spice. Old-school in the best possible way.
Barista Notes — Espresso
This one leans traditional, all chocolate and nut, so a standard 1:2 is the place to start. No need to reinvent the wheel.
- Ratio: 1:2 (22g in, 44g out) — a regular yield lets the rich bakers chocolate carry the shot and keeps the cherry acidity polite rather than pointy
- Time: 27–30 seconds — a steady, even extraction builds a heavy, syrupy body while staying clear of over-extracted bitterness and ashy notes
- Temp: 93°C — hold it stable and moderate, and the spice and fruit stay smooth and in balance with the toasted almond finish
Single Origin coffee orders can take up to 1.5 weeks to be delivered. We roast them weekly and they sell out fast.

Here's the scoop:
- Aussie rivals only: The competitor must be an Australian retailer with prices in AUD and shipping from within our great nation.
- Brand buddies: They must be an authorised retailer of the specific brand you're eyeing.
- Twinsies, please: The product needs to be an exact match, brand new in its box, and readily available.
- Delivery included: We'll factor in the competitor's delivery cost for an apples-to-apples comparison.
Now, for some exceptions, where our price-matching magic might not work:
- Cashback & discounts: We can't match deals involving cashback offers or special discount coupons.
- Bulk buys: Commercial quantity pricing is a different beast, so we won't match those either.
