Rocket Giotto Cronometro V – The Barista's Home Choice, Now With PID

The Giotto is the machine serious home baristas quietly settle on, and after more than twenty years of refinement at Rocket Espresso's Milan headquarters it is still there. The Cronometro V pairs a 1.8L heat exchange boiler with a commercial E61 group head, so you can pull a shot and steam milk at the same time — no waiting, no switching modes, no compromise.

What separates the Cronometro V from the Giottos before it is control. An accessible PID controller regulates boiler pressure and lets you fine-tune brew temperature for different roast styles, so a light Ethiopian and a dark Brazilian each get what they need. A digital shot timer sits above the power switch and appears only when the pump runs, sitting flush as a mirror finish the rest of the time.

Here is what that means on your bench:

  • Adjustable PID control: Regulates boiler pressure and lets you tune brew temperature to the bean. 
  • Commercial E61 group head: 4.05kg of chrome-plated brass. The thermosyphon circulates hot water through the group continuously, so the first shot of the day tastes like the fifth.
  • 1.8L insulated heat exchange boiler: Insulated wrap and 9mm brass end plates for thermal stability. Brew and steam simultaneously without either robbing the other.
  • Integrated digital shot timer: Hidden until the pump activates. Time every extraction, dial in your grind, and repeat the shots that work.
  • Cool-touch steam and hot water wands: Only the tip gets hot. Non-compression gear-design valves open with a quarter turn for immediate, powerful steam.
  • Twin manometers: Boiler pressure and pump pressure at a glance, so you can see what the machine is doing rather than guess.
  • Vibration pump, tank fed: Draws from the internal reservoir. Put it anywhere there is a power point — no plumbing required.
  • Height-adjustable feet: Raise or lower the machine to clear a low overhead cupboard or fit taller cups underneath.
  • Stainless steel bodywork: The iconic angled side panels, removable cup rail and drip tray. Built to be serviced and to last decades, not years.
  • Passive cup warmer: Boiler heat warms the top tray, so your cups are ready when the shot is.

At 335mm wide and 20kg, the Giotto is substantial without being a commercial unit — it sits comfortably on a standard kitchen bench and can be moved by one person when you need to clean behind it.

Giotto Cronometro V or Giotto FAST R — which one?

These are the two Giottos in the current Australian range, and they are further apart than the names suggest. Both use the same 1.8L heat exchange boiler, the same 58mm E61 group format and the same PID-plus-shot-timer approach. What differs:

  • Heat-up: The FAST R has a heating element built into the brew group casting itself, so it is ready in around 15 minutes. The Cronometro V heats the group indirectly from the boiler and wants 25 to 30.
  • Pump and water: The Cronometro V has a vibration pump and runs from its tank only. The FAST R has a commercial rotary pump — noticeably quieter — and can run from the tank or be plumbed directly into your water line.
  • Interface: An OLED display on the FAST R against a hidden PID touchpad behind the drip tray on the Cronometro V.
  • Bodywork: The FAST R has the redesigned asymmetric panels with integrated cup rails. The Cronometro V keeps the classic angled Giotto styling that has been on the bench for two decades.
  • Footprint: 335 x 420mm and 20kg for the Cronometro V, against 340 x 475mm and 30kg for the FAST R. The Cronometro V is meaningfully shallower and a third lighter.

Buy the Cronometro V if you make two or three coffees a morning, you are happy to run a timer plug or wait out the warm-up, and you would rather put the difference into a better grinder. It is the same coffee in the cup and it is the smarter buy for most people.

Step up to the FAST R if the warm-up is what stops you making coffee on a weekday, if you want the machine near-silent, or if you have plumbing available where it will sit.

Frequently Asked Questions

How long does it take to heat up?
Around 20 minutes from cold to a stable brew temperature. The E61 group is a large mass of brass and needs that time to come up with the boiler — rushing it is the most common cause of a sour first shot. Many owners put theirs on a timer plug.

Can I plumb the Giotto Cronometro V into my water line?
No. The V is tank-fed only. If you need a direct water connection, the Giotto FAST R has a rotary pump and can run from either the tank or a plumbed line.

Can it brew and steam at the same time?
Yes. Fresh brew water is drawn through a tube running inside the 1.8L steam boiler, so espresso extraction and milk steaming run simultaneously with no drop in steam pressure.

How much bench space and clearance do I need?
Allow 335mm wide by 420mm deep, plus room behind for the tank lid and cup rail, and about 500mm of vertical clearance so you can lift the E61 lever. The adjustable feet give you some room to move on height.

What grinder should I pair with it?

No — we show you what to do and how to pull the best shot out of your machine before you take it home. If you're from out of town, we can preset your machine so you're pulling great shots as soon as you unbox it. One small thing to be aware of: there'll be some residual coffee grinds left in the grinder from setup — we clean it out as best we can, but can't remove every last trace.

All of our home machines come with a 24 month factory warranty (unless listed differently in the spec table) and all grinders come with a 12 month factory warranty.
