From the Jalapa volcanic region, this fifth-generation Ventura family project is their processing playground. Planted in 2013, El Durazno breaks from traditional Guatemalan profiles through controlled anaerobic fermentation—sealed tanks slow fermentation, intensifying lactic acids and fruit sugars into jammy complexity. The tri-varietal blend pairs Caturra and Bourbon's refined sweetness with Catimor's spicy herbal edge, preventing one-dimensional fruit bomb territory. High-altitude density (1600–1850 MASL) locks in dark berry and citrus notes that cut through the roast's intensity.
Quick Tips for the Barista
Because this is a Natural Anaerobic coffee, it will be very soluble—meaning it gives up its flavour easily.
Temperature: Try starting a little lower than usual (around 91°C to 93°C). If the water is boiling hot, that "boozy" note can turn "medicinal" or harsh.
Ratio: A standard 1:16 (e.g., 15g coffee to 240g water) works well, but if you want to highlight the "winey" body, try a slightly tighter 1:15 ratio.
Grind: Aim for a medium-coarse setting. If it tastes too much like fermented vinegar, coarsen the grind; if it’s thin and sour, go finer.
Single Origin coffee orders can take up to 1.5 weeks to be delivered. We roast them weekly and they sell out fast.

- Aussie rivals only: The competitor must be an Australian retailer with prices in AUD and shipping from within our great nation.
- Brand buddies: They must be an authorised retailer of the specific brand you're eyeing.
- Twinsies, please: The product needs to be an exact match, brand new in its box, and readily available.
- Delivery included: We'll factor in the competitor's delivery cost for an apples-to-apples comparison.
