Grown between 1500-2000 meters, the slow ripening in cool mountain air develops exceptional density and complexity. Because this is a high-altitude, washed coffee, it’s quite dense. To get the most out of those delicate fruit notes without over-extracting, I’d suggest:
Target Ratio: 1:2 to 1:2.2 (e.g., 20g in, 40g–44g out).
Shot Time: 27–30 seconds.
